i received, "The brownie lover's bible" for my birthday and been wanting to use it for so long. Finally, last night i wanted to make just basic brownies. I go to look in the freezer and there is no BUTTER! NOOOOOO! i thought i was doomed. No choclate goodness tonight.
But a thought of genius sparked and i remembered i had bought some coconut oil form Whole foods that past week. Let me tell you, i am no vegan, but after looking into vegan and gluten-free cooking, i have been interested ever since.
After doing some research on the web, i replaced the butter with coconut oil with a 1:1 ratio and followed the recipe accordingly. It's amazing!
you get a very subtle coconut flavor but its very sweet and yummy! So relieved it work and can't wait to try more recipes with this substitution!
I also am in love with Vietnamese sandwiches!
